1 cup self-raising flour (sifted)

1-2 tbs caster sugar

1 egg (lightly beaten)

3/4 cup milk

50 g butter (melted, for frying)

Method

In a bowl, beat the egg and then whisk in the milk. Whisk in the sugar (how much you add will depend on how sweet you like your pancakes - don't forget to take toppings into consideration).

Sift in the flour and whisk until batter is smooth and lump-free.

In a hot pan or flat grill over medium-low heat, brush butter over cooking surface and pour 1/4 cup measures for each pancake.

When large bubbles form on the surface, flip the pancake over and cook until lightly golden on the other side. Keep an eye on them as they do cook quickly!

This recipe makes 8 pancakes.

The bus to work is never late, the bus to the plane is rarely on time. Really pretty place in winter for sure. Long days, my last hitch I was doing 15 15s but you can call the kitchen to save you a plate, eat sleep repeat. You’ll move around rooms quite a bit and there is quite a heavy turnover because it’s intense. There are always cookies and milk in the kitchen at midnight. Really cool operators, some real folks for sure. There are some tight collars that think it is not “your position to validate (say good job to) people” but nevermind them just enjoy it while you can and build those relationships that’ll get you a pint the next time you come through town; those other folks will never have that. It’s an experience you’ll never get anywhere else. It’s magic watching a winter sunrise at -20 F, red hills and purple sky, totally worth it. A good move if you have the ability to bail out when they start to try to own you otherwise I’d just wait for the next thing. Good luck.
